Taste Tum

Tum is made of various spices and encased with banana leaf then steamed for two hours. Tum is served to accompany nasi putih (steamed rice), we have to peel  the banana leaf first before we can enjoy the spicy Tum.

Balinese Culinary : Plecing Kangkung

Kangkung is the Indonesian word for swamp cabbage, a very common vegetable consumed by locals. Swamp cabbages are hand -picked and sliced to small pieces, then boiled.

The plecing kangkung is served with very spicy and hot sauce made of chili, shrimp paste, peaneuts and lime juice.  The fact that most girls like plecing kangkung.

Balinese Satay : Sate Lilit

Sate Lilit is made of seafood, mince to paste like state before being put back together around the Katik sate (satay stick) creating an interesting seafood taste. As most of Balinese food, sate lilit is also hot and spicy because its spices are made of birds-eye chillies. The sour taste comes from lime leaves and lime juice mixed in the spices.

Taste Balinese Jukut Ares

This dish can be Balinese soup. It’s called Jukut Ares.

It is made of young banana tree mixed with various meats such as pork meat. The young banana trunk is chopped and boiled in spicy water resulting in a soup-like culinary experience.

Balinese Sausage : Urutan

Now you might be wondering if suckling pig has its inside stuffed with spices and vegetables, where do the insides go? Do they throw it away? Of course not. They make urutan out of it.

Urutan is sausage ala Bali made of chopped pork encased within pig’s intestines. Coconut fiber is used to fasten the ends of the intestines and then usually  local Balinese would hang the urutan on a tree (to prevent dogs or cats stealing it) for approximately 1 day before trying and serving it.

Some said that the drier it gets, the better it tastes.

The best way to cook urutan is fried and grilled. Enjoy it, it is very tasty.

Balinese Dishes : Babi Guling or Pig Suckling

If you’ve been to Bali and have tried some local dishes. This must be you may have heard or even you tried.

Babi Guling or Pig Suckling is the most iconic and popular Balinese dishes. Babi Guling is made of a whole young pig stuffed with various spices and roll-roasted for 3-4 hours on a top of a coconut husk fire. One serving of Babi Guling usually consists of the dry and crispy skins, diced babi guling meat and the spices from inside the Babi Guling.

It is very easy to find restaurants or warung (stall) that serve Babi Guling as a menu. Babi Guling is usually served with Lawar too.

The best Babi Guling Restaurant in Bali can be in Warung Gemah Ripah in Denpasar and Warung Bu Oka in Ubud. If you rent a car in Bali with a driver, ask them to go to those places and then you can taste the real Balinese Dishes.

Be aware that most of Balinese dishes are spicy and little bit hot.

Balinese Cuisine : Lawar

After getting where to stay in Kuta or other places in Bali, now it’s time to find out what Balinese Cuisine has to offer. Lawar is one of the traditional and most popular cuisine here.

Lawar is Babi Guling’s sidekick (Babi Guling means Pig Suckling) and is usually served during traditional Balinese ceremonies. The main ingredients are turtle meat (now it’s forbidden since Turtle is nearly in extinction), chicken, beef combined with coconut and jack fruit, yet the most complex ingredients are spices.

The main ingredients is chopped into small pieces and then cooked with the spices.

Sometimes, they add blood too, thus resulting the red color that Lawar usually is. So finding out the color is the way to know if it has blood or not to put. But do not get worried, most that you find in the restaurants and warung (stalls) that sell Lawar is bloodless.

Not many Balinese people can be a good Patus (Lawar Maker). In some groups called Banjar, they usually have one or two patus.

The best moment to find people making this popular dish is when there is a ceremony. They will make Lawar because they use it in ceremony.
